King Island Dairy Roaring Forties Blue has a moist, crumbly, chalky looking yellow centre with sage green-yellow veins. After cutting, exposure to oxygen changes the colour of the mould back to blue. Tasmanian Heritage True Blue
Tasting Profile:
True Blue is made with ultra filtered milk so the milk is thicker and more concentrated resulting in a firmer curd with a denser texture. The curds are placed in smaller vessels because less moisture needs to be given off (compared to untreated milk) and there is less blue development because of its firmer texture, resulting in a mild flavour. True Blue is salted in a brine bath then dipped in boiling water to kill surface blue mould. It is then pierced, and the surface sprayed with white mould (Penicillium Candidum) to develop a white rind. True Blue has a white cloak lined with rack marks. Its centre is a pale yellow cream speckled with sage green mould. True Blue has a sweet milky aroma with the faintest hint of mushroom from the rind. True Blue has a dense fudge-like texture and a buttery mouth feel. It has a mild blue flavour, pleasant tang and aftertaste of walnut.
