Cheese selection

Select around six types of cheese and complementary wine styles to match, aiming for a cross-section of styles for interest and variety.

Refer to the Mix & Match Wheel as a guide.

If you like, ask each guest to bring one cheese and/or one wine along with them.

An example of a good selection that covers most categories is:

  • Goat’s cheese
  • Soft White cheese (eg. Brie or Camembert)
  • Vintage cheddar
  • Eye cheese (eg. Gruyere or Swiss-style)
  • Washed Rind cheese
  • Blue cheese

With experience, you may like to try a matching session that focuses on a particular cheese category (eg. Soft White cheeses) and provide a range of different styles (eg. Brie, Camembert, Triple Cream, Ashed Brie) or cheeses from different regions.

In general, allow 20-30 grams of each cheese per person, but no more than a total of 120 grams per person.

If you are serving a complementary wine for each cheese, the amount of wine consumed can certainly add up so make sure you limit pours to no more than 50ml. For a tasting of 6 wines this will amount to 2 standard drinks (ie. 1 standard drink= 150ml). Please be aware of the responsible service of alcohol, and encourage guests to sip not swill.
