Blue Cheese
Blue Cheese, Pumpkin and Walnut Gnocchi
Ingredients
- 500g pumpkin, cubed
- sea salt and freshly ground black pepper, to taste
- olive oil, as required
- 1/3 cup walnuts or pecans, chopped
- 500g gnocchi or spiral pasta
- 80g rocket leaves
- 200g King Island Dairy Roaring Forties Blue cheese, crumbled
Method
Place pumpkin on a baking tray, season with salt, pepper and olive oil and roast at 180C for 10 minutes until golden brown. Add walnuts and roast a further 5 minutes. Boil gnocchi in salted water until ‘al dente’ and drain. Toss with pumpkin, walnuts, rocket and
King Island Dairy Roaring Forties Blue cheese. Dress to taste with olive oil, salt and pepper and serve immediately.
