Cheddar Cheese

Aussie Beer and Onion Soup with Cheddar Toasts


  • 50g butter
  • 1 tablespoon extra virgin olive oil
  • 3 brown onions, halved and finely sliced
  • 3 cloves garlic, crushed
  • ½ teaspoon sea salt
  • 345ml bottle James Squire Original Amber Ale
  • 1 litre beef stock, preferably home made
  • 1 teaspoon Worcestershire sauce
  • 1 bay leaf
  • 1 frenchstick, sliced
  • 200g Cracker Barrel Vintage Cheddar

Melt the butter and oil in a large stockpot and sauté onions, garlic and salt over low heat for 15-20 minutes until onions are very soft and a light golden colour. Add James Squire Original Amber Ale, stock, Worcestershire sauce and bay leaf and simmer covered for 30 minutes. Just before serving, grill frenchstick slices on both sides until lightly toasted, top with grated Cracker Barrel Vintage Cheddar and grill until melted. Serve hot soup in bowls and float Cheddar Toasts on top.
