Blue Cheese

Four Cheese Pizza

Ingredients

  • 1 x 30cm round pizza base
  • ¼ cup tomato passata
  • 125g grated Coon Pizza cheese
  • 30g King Island Dairy Blue cheese, crumbled
  • 30g South Cape Goat’s cheese or Fetta, crumbled
  • 2 tablespoons freshly grated Mil Lel Parmesan
  • freshly ground black pepper, to taste


Method
Spread pizza base with tomato passata, sprinkle with Mozzarella, Blue, Goat’s cheese and Parmesan. Bake at 230°C for 10-15 minutes until golden brown and cooked underneath. If the underside requires more browning, bake on the base of the oven for a few minutes.

Quick Pizza Dough - Makes 2 x 30cm pizza bases

Ingredients

  • 4 cups (500g) flour
  • 3 teaspoons (10g) dried yeast
  • 2 teaspoons salt
  • 1 teaspoon sugar
  • 350ml lukewarm water
  • 2 tablespoons olive oil

Method
Combine flour, yeast, salt, sugar, water and 2 tablespoons oil in a large bowl or stand mixer and mix and knead to form a smooth dough. Divide and roll dough out to fit 2 x 30cm pizza trays.
