Combine vinegar and brown sugar in a saucepan and heat, stirring until the sugar has dissolved, then boil until syrupy and reduced by 1/3. Cut Goat’s cheese into eight slices. Make a deep cut into the centre of each fig, insert a slice of Goat’s cheese and place on an oven tray, shaping the fig back together.
Bake at 200°C for 10 minutes until warmed through. Quickly wrap each fig in prosciutto and place onto serving plates. Drizzle with balsamic glaze, sprinkle with pepper and serve immediately.
