Soft White Cheese

Light Lunch with Double Brie and Smoked Salmon

Ingredients

  • 2 thick slices fresh crusty bread (ciabatta, sourdough or pastadura)
  • 100g smoked salmon slices
  • 100g Tasmanian Heritage Double Brie, sliced
  • lemon juice, to taste
  • olive oil, to taste
  • freshly ground black pepper, to taste
  • ¼ cup rocket leaves
  • ¼ red onion, sliced into wedges
  • 1/2 teaspoon capers

Method

Lightly toast bread and layer with smoked salmon and Tasmanian Heritage Double Brie. Season with lemon, olive oil and pepper. Add a side salad of fresh rocket, sliced red onion and capers dressed with lemon and olive oil.
