Soft White Cheese

Stewed Fruits with Double Brie


  • 4 stone fruits, halved and stone removed
  • 1 pear, quartered and pips removed
  • ¼ cup sugar
  • 1 cup red wine or marsala
  • 3 cups water
  • Grated rind of 1 orange 
  • 1 vanilla bean
  • 1 cinnamon stick
  • 140g Tasmanian Heritage Double Brie, sliced 
  • Almond bread, for serving


Gently combine fruits, sugar, wine, water, orange rind, vanilla bean and cinnamon stick in a saucepan. Bring to the boil, then simmer uncovered for 10-15 minutes until the fruit is soft and liquid has reduced. Serve with generous slices of Tasmanian Heritage Double Brie and almond bread.
