Tasting Profile:

Cape Wickham Double Brie has a velvety, dense white rind with a beautiful glossy, creamy yellow centre. The younger cheese has a scent of fresh mushrooms which progresses to a more straw like aroma as it ripens. With maturity, Cape Wickham Double Brie develops briny cauliflower flavour with a gently oozing, rich and sticky custard cream texture and mouth feel.

Tasmanian Heritage White Pearl

Tasting Profile:

Tasmanian Heritage White Pearl has a moderately dense white mould coat. Its centre is a glossy, verging on lustrous, rich cream, almost butter colour. Tasmanian Heritage White Pearl has a mushroom- like aroma. The mature Tasmanian Heritage White Pearl has a savoury milkiness, subtle mushroom sauce notes and a touch of pleasant bitter to its taste. Due to its high moisture content it is not at all cloying, rather it melts away on the tongue in the nicest, lightest way.

Tasmanian Heritage Signature Camembert has a white mould coat that is mottled and powdery looking. Inside it is a glossy, intense cream colour. Tasmanian Heritage Signature Camembert has a scent of fresh lovely cauliflower. With maturity, Tasmanian Heritage Signature Camembert develops savoury, salt and toasted walnut flavour with a gently flowing almost honey-like texture and long lingering silken mouth feel. The rind is really pleasantly tender.
